there are several good openings that start with 1. e4 e5. Kasparov had great success with the scotch. The king's gambit is also quite good especially at the non-master level (ie 99% of us). you name it.
the best opening is what your comfortable with.

my opinion i like the 1. e4 e5 gambits as white, particularly the
king's gambit, which comes after 2. f4... i've also
recently learned the evans gambit opening (1. e4 e5
2. Nf3 Nc6 3. Bc4 Bc5 4. b4) because of white's
good attacking chances. Of course, it's a matter of
personal preference...

My choice I like the Bishops Gambit which arises from the kings gambit.

1.e4 e5 2. f4 exf4 3.Bc4...

I find that after 3...Qh4+ 4. Kf1.. Black ends up defending the rest of the game (if played correctly by white of course), after moves like Nf3, d4, Nc3 by white. Plus a lot of people aren't really ready for it, they expect 3.Nf3 most of the time and get over confident when they see 3.Bc4 (unless theyr'e 1800+ of course:)) Apparently a fave of Fischers too!

i like playing 2.Nc3 and i like 2.f4 as well, but i think 2.Nc3 is a nice move to play, followed by f4 on the third move.

the latvian gambit is my favorite. 1.e4 e5 2.Nc3 Nf6 3.f4 exf4 4.Nf3 Very good attacking chances for white, especially after Bc4, and eventually Bxf7+ (before black castles, of course) Kxf7 Ng5+

If you mean for White I suggest the Ponziani Opening: 1.e4 e5 2.Nf3 Nc6 3.c3! It's almost never seen at any level,and can lead to good,attacking positions for White. For Black,Philador's Defense: 1.e4 e5 2.Nf3 d6! With just one little move,you've taken White totally out of his prepared lines in the Lopez,King's Gambit,Scotch,etc.
